Yes I certainly agree with most of these, having seen all but a couple of them. My take on things is to break movie dogfights into three categories. Those achieved through models and full scale mock ups. Actual flying aircraft, and CGI.
For the first category, using models, I'd include the climax to "A Yank in the RAF" to the top movie dogfights. For those using real aircraft the video above covers most of my favorites, except for "Darling Lilli", which features some truly amazing aerial footage, but is often ignored.
As for CGI dogfights the best I've seen features in a Chinese movie (not the one with Bruce Willis), that covers the entire Sino-Japanese war from the early use of biplanes by both sides to the Flying Tigers. Not sure what it's called though.

Unless it's science fiction, CGI automatically fails to make the list, in my book.

One of the best dogfights is the film where a Stearman dogfights with several helicopters. Can't remember the film though?
My personal favourite The Battle of Yavin from ANH.

The Great Waldo Pepper was a delight from start to finish.

You're thinking of Capricorn One - quite agree, some great stuntwork, and quite topical at the moment!

Talking of Stearmans, I liked the film where Walter Matheu was an ex crop duster turned bank robber. Forgot the name of it now, no dogfighting just good scenes.

Sopwith, that's Charlie Varrick. Great film.

Matthau was a pilot I think and also starred in Hopscotch, another excellent film which featured a "dogfight" sequence between a Stampe and a Jetranger over the Seven Sisters. Possibly Nigel Brendish or David Perrin in the Stampe. Rest of the cast was excellent too, with a link to Capricorn One!

                  Can't stand CGI...

Yes thats it Hooligan, it was a brilliant film. I will look out for the other one as I always liked a Walter Matheu film ( I probably spelt his surname wrong )

I watched Iron Eagle (1 and 2) at the weekend.

The dogfights in that weren't too bad. A little samey, but pretty good. The rest of the film is pretty forgettable, though!
